Something I like to make in a pinch for a snack or even a meal depending on what I eat with it is egg salad. It is very basic. It is just chopped hard boiled eggs, mayo, and chopped up pickles. I do use salt and pepper as well. A serving is probably 2 eggs worth but I usually eat 4 if I am not eating anything else. If I do eat it with something be it bread or crackers, I will do 2 eggs.
There is about 6 grams of protein per egg. There is protein in the mayo as well but it is a small amount. So if you use 4 large eggs, that is 24 grams of protein. Not bad for a snack or meal!
This sounds a lot easier than the recipe I use. I am going to have to try it. I have a hard time finding basic and easy recipes I like that are high in protein and always stick with the same 4 or 5 things I been eating for months.
